Chicken Cacciatore

4 medium chicken breasts
1 t sea salt
¼ t black pepper
2 cloves garlic, minced
½ large onion, diced
1 large red bell pepper, diced
1 (14.5 oz) can diced tomatoes, drained
1 T fresh rosemary, chopped
1 T fresh thyme, chopped
1 medium bay leaf

Season the chicken breasts on both sides with salt and pepper. Place the chicken into the slow cooker.

In a medium bowl, stir together the garlic, onion, bell peppers, diced tomatoes, rosemary, and thyme. Pour the sauce evenly over the chicken. Place a bay leaf in the centre.

Cover, and cook for 6–8 hours on LOW.

Serve right away.

Tip: If you prefer a thicker sauce, remove the chicken, and cook the sauce for an additional hour in the slow cooker on LOW.
