Slow Cooker Gumbo

Serves: 8

INGREDIENTS: 3 lbs boneless, skinless chicken thighs
1 lb sausage, cut into rounds
1 bell pepper, diced 1 onion, diced
2 celery stalks, diced
5 cloves fresh garlic, peeled and diced
6 oz tomato paste
15 oz diced tomatoes
1–2 cups chicken bone broth
1 T Cajun seasoning
½ t cayenne
½ t thyme
½ t oregano
½ t pepper
1 lb frozen shrimp, deveined, no tails

Add all the ingredients, except the shrimp, to a 6-quart slow cooker. Stir, and mix well.

Cook on LOW for 7 hours.

Add the shrimp 20 minutes before serving.

Keep warm, and enjoy!
